Walleye Chowder

  1. Over medium heat, melt the butter in a heavy pot. Add the chopped onion when the butter begins to gently bubble, cook until it’s soft and translucent.

  2. Add the potatoes and coat with the butter. Cook for 1 to 2 minutes. Pour in the fish stock, water and oregano and add salt and pepper to your liking. Simmer gently for about 20 minutes, or until the potatoes are tender.

  3. Add the walleye and sausage to the pot and simmer gently 10 minutes. Add more salt, pepper, or spices as needed to your taste now.

  4. Add a dollop of sour cream into the bowl as well as a sprinkle of dill if you like.
