Homemade Sushi with Baked Trout

Instructions

  1. Prepare sushi rice as per package directions. Rinse rice, add rice and water to a pot, bring to boil then let simmer for 15 minutes. Remove and let stand covered for 5 minutes. Mix in rice vinegar, sugar, and salt.

  2. Bake trout at 400 degrees F for approximately 10-12 minutes, just until flaking.

  3. Flake the whole fillet and mix with spicy mayo (or other sauce of choice) to your liking.

  4. Lay out a nori sheet on a bamboo roller or parchment paper. Spread a thin layer of sushi rice on top. Wetting your hands slightly before spreading the rice can help it not stick to your hands as much.

  5. On the edge closest to you, make a line of trout, cucumber and carrot and your other favorite fixings.

  6. Begin by tightly rolling away from you. Once the roll is complete, you can wrap in saran wrap and place in the fridge for a few minutes to make it easier to slice.

  7. Slice your sushi rolls into pieces about 3/4 inches thick, or to your liking. Wetting your knife between slices can help prevent rice sticking to the blade.

  8. Plate and serve with your favorite sushi garnishes such as wasabi, pickled ginger, and soy sauce.
