This simple flaky trout bruschetta recipe makes an especially delicious and easy appetizer for the Christmas or the holiday season, or any other event you might be hosting that requires some simple o’dourves. You can serve it over any toasted bread or crackers of your choosing.

Salt and pepper trout fillet, cook in oven at 400F for 30 minutes or until flakey

Once trout is done, flake and set aside

For tomato mixture: Finely chop tomatoes, garlic, and basil and add to large bowl.

Add parmesan, balsamic vinegar, olive oil, salt and pepper. Toss mixture well.

Garnish with trout and more parmesan if desired.
Note
To toast bread*: position oven rack a few inches below broil and preheat broiler. Align bread slices on an 18 by 13-inch baking sheet. Broil first side until golden brown, about 1 minute (don't walk away and keep and eye on them they'll brown quickly), then flip slices to opposite side and broil opposite side until golden brown.
