Preheat pan over medium/medium high heat. While pan is warming, season fish steaks with salt and pepper on both sides. Add oil and butter to pan, evenly coat the inside of the pan. When butter begins to bubble inside the oil and pan add fish steaks meat side down.
Cook for 4-5 minutes*, then flip. Immediately add honey, lemon juice, garlic, red pepper flakes, chilli powder, and any other spices you wish to use. Use a spoon to baste liquid onto the fish steaks.
Cook and baste for another 4-5 minutes. Enjoy!
