Before working with raw fish, take wooden skewers and place in a container of water. Weigh them down with something so they are fully submerged.
Cut pike into 2x2 inch chunks or smaller. Pull out any straggler bones. Put all pieces into ziploc bag with all spices and lime juice. Set aside for approximately an hour.
Pre-heat Traeger grill to 350F or other BBQ/oven of your choice.
Wrap each piece of pike in a piece of bacon and thread onto wooden skewer. Create as many as you would like. You are also free to add vegetables or fruit to the skewer if you wish.
Lay all skewers on the traeger, put some bbq sauce on each piece, allow the sauce to leak down the sides. After 20 minutes, flip the skewers, and add more sauce. Cook another 20 minutes or until bacon is cooked. You may “baste” your skewers with bbq sauce during this time.
Remove from heat and enjoy
