Cut bluegill into small chunks, approx 1-1.5 inch wide.
Fry bluegill with onions, garlic, and butter on medium/high heat until just cooked through but still very moist. Season with salt & pepper.
Set aside for now.
Combine cream cheese, mayonnaise, shredded cheese, paprika, herb & garlic spice, lemon juice, hot sauce and salt & pepper. Mix well until smooth.
Add mixture to a small cast iron pan or other heat safe cooking receptacle. Spread fish mixture over the top of the cheese mixture. Create a small well in the center of the mixture. Add the bruschetta to the well. Sprinkle flaked parmesan overtop. Add some salt, pepper, and squirt of lemon juice around over the top of everything.
Preheat the oven to 350 F degrees. Put the mixture in for 20 minutes to start. Watch for some browning and bubbling of the cheese mixture around the sides of the pan underneath the fish mixture.
