Apparently, this recipe was born out of a lack of regular grocery shopping. Seems one of our staffers found himself at home with hungry kids and nothing other than a decent-sized package of walleye fillets, half a cabbage, a container or rice from carry-out the day (or two) before, and some assorted vegetables.
He now claims it’s one of the best recipes he’s come up with a long time…
Yep, you read that right: Cajun walleye fried rice.
Who doesn’t love fried rice? It’s simple, yet nourishing and tasty. You take some rice, onion, garlic, ginger, beaten egg(s), meat, minced vegetables, and fry it up—if you’re lucky—on something like a Blackstone griddle outside, flipping the contents numerous times to get everything cooked, a little bit browned, and hot for the plate.
Add 2-3 tablespoons of olive or canola oil to griddle, cast iron pan, or large electric frying pan. Heat and add 3 cloves minced garlic and 2-inch sliced & diced section of ginger root. Stir constantly and brown over medium heat.
Add sliced & diced cabbage and all vegetables. Stir and cook 5-8 minutes.
Add egg wash, stir and fry, bringing heat up a bit for faster cooking.
Add large chunks of walleye; season with Cajun or blackening seasoning of choice. Stir gently so as not to break up walleye chunks, browning a bit.
Add three cups of cooked white rice (jasmine, basmati, Minute Rice, whatever-you-have) – stir gently, again, so not to break up walleye chunks.
Add three or four generous splashes of sesame oil to all.
Put cover on cast iron skillet or electric frying pan. Our staffer is a big fan of the models linked, which are large enough to cook for an entire family. Both make great additions not only to the home kitchen but for deer camp and ice fishing trips.
Reduce heat to just between low and medium; cook with cover on for 10-12 minutes.
Remove lid and add juice of one lime plus cilantro.
Serve with lime wedges and soy sauce.
**For a truly more Cajun version, add cubed Andouille sausage and sliced okra to the above mix. As mentioned, our staffer’s refrigerator and pantry were pretty bare…
